Agaro-oligosaccharide (AO) is a new type of marine functional oligosaccharide which is the product of the degradation of agarose. AO can be divided into agarose oligosaccharide or new agarose oligosaccharide based on the apparent differences in the reducing end. Compared to polysaccharides, AO obtained by degradation shows better water solubility and is more easily absorbed by the body. In addition, AO not only has the general properties of functional oligosaccharides, but also has many physiological functional properties that cannot be replaced by ordinary oligosaccharides, such as strong anti-cancer, antioxidant, anti-inflammatory and anti-virus activities.
