Potassium Alginate

Potassium alginate is a gum that is the potassium salt of alginic acid. It is formed by α-L-mannuronic acid (M section) and β-D-guluronic acid (G section) linked by 1,4-glucosidic bond. It is odorless and tasteless and is readily soluble in cold water, forming a viscous colloidal solution. Potassium alginate has good hydrophilicity, stability, thickening and gelling properties. It is therefore widely used in the food, pharmaceutical and dental industries.

  Potassium alginate is used in the food industry as a thickening agent, gelling agent and emulsifier. It is mainly used in the preparation of sweets, puddings, juices, ice creams and sauces.
