Potassium alginate is a gum that is the potassium salt of alginic acid. It is formed by α-L-mannuronic acid (M section) and β-D-guluronic acid (G section) linked by 1,4-glucosidic bond. It is odorless and tasteless and is readily soluble in cold water, forming a viscous colloidal solution. Potassium alginate has good hydrophilicity, stability, thickening and gelling properties. It is therefore widely used in the food, pharmaceutical and dental industries.
