Carrageenan Oligosaccharide

Carrageenan oligosaccharide (CAO) is a hydrolysate of carrageenan from marine red algae. Compared with carrageenan polysaccharide, CAO has good solubility and bioavailability. Methods such as chemical degradation, physical degradation, and enzymatic degradation have been proven to be used to prepare CAO with different structures and degrees of polymerization (DPs). Numerous studies have shown that CAO exhibits a variety of biological activities for human health, including antioxidant, immunomodulatory, anti-inflammatory and anti-virus activities. Based on these extensive biological activities, CAO has gained increasing attention in a variety of potential applications since 2005. According to statistics, its research mainly focuses on the fields of biology, chemistry and food science technology.
