Fucoidan is a complex polysaccharide derived from brown seaweeds and some marine invertebrates such as sea urchins and sea cucumbers. It is a water-soluble heteropolysaccharide composed of L-fucose and sulfate groups, the main monosaccharide component of which is L-fucose-4-sulfate. It also consists of other monosaccharides including uronic acid, galactose, xylose, mannose, rhamnose, glucose, arabinose and xylose. Fucoidan is favored worldwide, particularly in the food and pharmaceutical industries. This is because it possesses a range of attractive biological activities, including antitumor, antioxidant, anticoagulant, antithrombotic, antiviral and anti-inflammatory effects. These activities depend on the type of glycosidic bond, the constituent species, conformation, molecular weight and sulfate content, whereas all of the above factors depend on the seaweed species, the method of isolation, acquired fraction and the season of harvest.

Fucoidan is effective in preventing or treating cancer. It can exert anticancer effects directly and can also indirectly kill cancer cells by boosting immunity (such as activating natural killer cells NK and macrophage). In addition, fucoidan has been shown to alleviate metabolic syndrome, protect the gastrointestinal tract and benefit angiogenesis and bone health.
