Characteristic
Sodium alginate is a natural hydrophilic polysaccharide isolated from marine brown algae. It consists mainly of the sodium salt of alginate, a copolymer of β-D-mannuronic acid (M-unit) and α-L-gulonuronic acid (G-unit) linked by β-1,4-glycosidic bonds and composed of different proportions of GM, MM and GG fragments. It has the characteristics of thickening, suspending, emulsifying, stabilizing, forming a gel, forming a film and spinning fibers, and has a long and extensive use in the food, textile and printing industries.

Applications
Food grade sodium alginate is widely used in the food industry for its thickening, gelling and stabilizing properties. Typical applications are described below.
a. Agricultural industry
In the production of rice and noodles, breakage and crisp rate are important indicators. As a natural high molecular polysaccharide, sodium alginate helps to increase the gluten rate of wheat, improve the stickiness of rice and noodles, and reduce the breakage and recovery rate of wet rice and noodles.
b. Jelly and pudding
When calcium salts come into contact with sodium alginate solution, it forms a gel. Using this property, clear and soft jellies and puddings can be prepared.
c. Ice cream
By combining thickening and gelling functions, sodium alginate is used as a stabilizer to maintain the physical properties of the ice cream. Ice cream with the addition of sodium alginate is not only smooth and delicate, but also less likely to form ice crystals during storage.
- Textile and printing industry
The main application of industrial grade sodium alginate is textile and printing. In the textile printing industry, sodium alginate is used in color pastes for reactive dyes and as a thickening agent for reactive dyes in textile screen printing.
