Ammonium alginate is the ammonium salt of alginic acid. It is a natural, indigestible polysaccharide found in different marine algae such as brown marine algae (kelp and wracks). As a hydrophilic colloid, the substance can dissolve in water to form a viscous solution. In addition, it enables two incompatible phases (e.g. oil and water) to miscible with each other to form a homogeneous dispersion or emulsifier.
